Sun, Feta And Pasta – Happy Summer!

June 30, 2015 By Kimberly A. Cook 1 Comment

by Kimberly A Cook                 (Twitter@   WarriorTales)

With our wacky weather giving us early hot temperatures and then thunderstorms and humidity, the best thing to do is pace ourselves. Or in my case, be lazy. One way I accomplish that is to make salads I love which last for a week. I think calories don’t exist during heat waves, at least according to the ransacking the grocery store ice cream aisle took last Wednesday night.

If I had my way, this would be Feta Greek Salad with pasta, but I am watching my cheese intake. Kinda. Greek Pasta Salad ala Kim!
If I had my way, this would be Feta Cheese Greek Salad with pasta, but I am watching my cheese intake. Kinda. Greek Pasta Salad ala Kim!

Today I’m sharing two fabulous pasta salad recipes. All you have to know how to do is boil water and chop.

Out to dinner with a friend last Thursday night and we explored the joy of making food, knitting and jewelry items that look complicated but are easy. Not lazy, I prefer to call it efficient. These two salads fit the bill, just in time for the long holiday weekend!

The original Shrimp Pasta Salad recipe from a co-worker at the day job is second. I modified her recipe for a Greek Pasta Salad I adore right below. Perfect for hot weather and the coming Fourth of July picnics! Here goes:

Greek Pasta Salad ala Kim

1 package Orzo pasta, 16 oz. – I use Barilla

1 bottle Girard’s Greek Feta vinaigrette

1 Cup chopped celery

1 whole cucumber, chopped

3/4 pint of cherry tomatoes cut in half

6 to 8 ounces of Traditional Feta crumbled cheese

9 Kalamata olives cut in fourths (I found they have ones already halved and pitted, score!)

Bring 4 to 6 quarts of water to boil. (I used a 6-Quart pot, but a larger pot works better so you don’t have to watch it all the time.) Add dash of olive oil to boiling water. Cook pasta for 9 to 10 minutes. Drain in strainer using lukewarm water, not cold. Place in 4-Quart bowl. Pour entire bottle of salad dressing over pasta and stir. Cover and place in fridge overnight or for four hours. Chop everything else and mix well.

Original recipe – Shrimp Pasta Salad

1 package Orzo pasta, 16 oz.

1 bottle Girard’s Champagne dressing, lite

1 Cup Chopped celery

1 Cup Sliced green onion

1/2 Cup Mayonnaise (optional)

1 Tablespoon Mustard

1 tablespoon Dill Pickle Relish (I’m a sweet relish girl myself, do what you want)

1 teaspoon celery seed

1/2 to 3/4 pound Salad Shrimp

Same as above, marinate pasta overnight, then thrown all the ingredients in. Fabulous! This is so simple and looks great too.

Let’s raise a bowl to summer, cheese and pasta!

Photo Alert: To my photographer friends, tonight is the full Thunder Moon so get out there with your cameras between 8 p.m. and 9 p.m. and get some great pictures. If you can see the moon, that is! Have fun!

Got Spring Fever?

February 3, 2015 By Kimberly A. Cook 2 Comments

by Kimberly A. Cook             (Twitter@ WarriorTales)

The Super Bowl is over so it must be Spring. Wait one. Poor Punxsutawney Phil the Groundhog had to use an ice ax and a snow blower to even reach daylight yesterday, so seeing his shadow was a guarantee. More winter for all. While the East is under their thirteenth snow attack it seems, flowers are blooming here in Oregon.

How is this for a perfect pink camellia blossom?
How is this for a perfect pink camellia blossom?

At my writer friend’s house Saturday to carpool to our support group, she had a fabulous yard full of blooming camellias. Could not resist taking a few pictures, but I have no idea of the camellias names. An article in the newspaper a couple of weeks ago said the camellia in my backyard which blooms during the winter and sets off Spec Ops Cat’s allergies is a Yuletide. Makes sense since it is bright red with a yellow center.

I’d chop it down but the birdies love it. Plus Spec Ops Cat enjoys watching the birdies, Cat TV from inside, so it’s a Catch- 22. Since we had sun on Saturday and rain on Sunday, made me want to either take a nap in a sun spot or cuddle up in a blanket. Spec Ops Cat chose to sleep in the sun spot. Smart boy.

It might be the transition time of year here but we can always get another snow event, like we did in February 2014. Think it is the possibility of Spring that makes me want to run and break out my sandals. Too cold now, but my toes love to run naked when they can.

The Mamas and Papas song, “California Dreamin” comes to mind, but my version would be Spring Dreamin. I checked the planter full of bulbs and the brave ones are raising their little green heads above the soil. On Feb. 16, President’s Day, it will be time to cut back the roses.

The days roll on and suddenly we will turn the clocks back and then Spring will arrive. Spring is my favorite season with all the new growth and buds. And Easter bunnies! Here’s wishing us all dreams of Spring and warmer days.

Took this photo of the moon from my backyard last night. The calendar says tonight is the Snow Moon. Don't tell the East Coast!

And hopefully someone gave Phil the Groundhog a nice big cup of cocoa with mini-marshmallows to keep him warm until Spring arrives.

Are There Hidden Photo Gems On Your Computer?

January 27, 2015 By Kimberly A. Cook 1 Comment

by Kimberly A. Cook           (Twitter@ WarriorTales)

Drove out to the Columbia River for a car picnic with my Mom this past weekend. We packed a lunch, enjoyed the sun and river sights and stayed in the car. Unusual warm weather for January. (Sorry East Coast blizzard people)

We talked about photography and how much I enjoy it, plus the fact my current home computer must be replaced since it is out of memory and eight years old. Obviously the Windows self destruct program hasn’t activated. Yet.

Photo stalking the wild chipmunk in his native habitat. A true test of photo skills. Especially when they appear ready to charge!

Back at home I decided to print out a couple of my favorite vacation photos to take to the day job; scenic memories to give me a mini-vacation sun break time out. I focused on recent trips to Sisters, Oregon, with my friend Joann, one of my top five favorite places.

I rediscovered fun memories and a few good pictures I’d forgotten about. When I switched from film to digital photography in 2007, the whole “I can’t see my pics” problem began. It’s so easy to forget the fabulous pixels we have stored on our hard drives, which I also back up three other places since I’m paranoid.

Half of my digital photos are organized by date and the other half by topic. The goal is to switch all the pics into topic groupings, but I keep taking more pictures and not finding the time to sort, and now the computer memory problem.

Two of the crafty camera shy sprinters in one picture. Miracles do happen.

But it’s time to take action soon and get a new computer with enough memory to last a couple of years. Then start the transfer and sorting of photos, video and stories. (This will require tons of peanut M&Ms to accomplish, just saying) Since I haven’t loaded new photos for the past couple months, who knows what wonderful photo gems I’m missing. Or not.

So here are a few pictures from one of my Sisters, Oregon trips to encourage you to frisk your computer hard drive and find some fab photos. Enjoy the trip!

Sneak attack! Or sneaker attack, you choose. Love this photo even though I had to contort myself into a pretzel to get this shot of my friend's foot when she was sitting beside me.

Have You Taken A Pumpkin Photo Break?

October 14, 2014 By Kimberly A. Cook Leave a Comment

by Kimberly A. Cook             (Twitter@ WarriorTales)

This time of year I dread the coming of the dark season. To distract myself, besides imagining writing I can get done on rainy days and baking tons of cookies, taking pictures with Fall light becomes my passion. Trying to catch the last rays of the year and the amber light is an exercise in patience and quick draw with a camera.

Since I always have a camera with me, besides my cell phone camera with no zoom, it becomes a game to see where and when I can capture the waning golden light of the season.

A herd of pumpkins waiting at sunset to be taken home and carved.
A herd of pumpkins waiting at sunset to be taken home and carved.

This first picture I had to take last week while grocery shopping. I’d only stopped for a few things, but I couldn’t resist the golden light on the pile of pumpkins outside the grocery store.

Since I long ago got over what anyone thought who might see me taking pictures of produce, life is good. Lately I’ve even taken pics of some great displays inside retail stores, since many are works of art.

So if it’s not pumpkins, then leaves are a big deal this time of year. This next picture I snapped after work at the day job. In the parking lot! One does not have to be in exotic locations to get great photos. There are several malls and one post office where I’m always watching the trees and plants because they are great for close-ups.

Sun slipping into the night - over the parking lot.

So, if it were not for the dratted cross walk sign you can barely see in the bottom right corner, people might think this blissful scene was way out in the woods, not surrounded by asphalt. Look around for big and small details this season. For Pete’s sake look UP too.

We have the first big rain storm coming in today after a summer of high temperatures. So while we all huddle inside and work on our creative projects, clean things out and plan the killer list of fun baking projects for the holidays, remember to take some great pictures.

You never know what you might want to send on a holiday card or in a family newsletter. Try something out of the ordinary. Let’s all celebrate the season of photography!

Isn't he cute? Happy Halloween photo hunting!

Can You Take A Photo Field Trip From Your Front Porch?

February 18, 2014 By Kimberly A. Cook 2 Comments

by Kimberly A. Cook             (Twitter@ WarriorTales)

Slogging away on the treadmill Sunday I spied the first robin of the season. Then I saw another and another and another; there were a gaggle of robins. The field across the road seemed to be robin snack central. Since I heard crickets for the first time Saturday night, seemed like a possible reason.

Robin looking for crickets by a mud puddle across from my front porch. Pretty bird!

So I grabbed both cameras and took a long jaunt on a photo field trip – to my front porch to be exact. Sat down on the top step and proceeded to take pics of the birds. The camera I carry with me all the time is a Canon PowerShot SD800 IS Digital Elph. Adore this camera, even though it only has a 3.8x zoom lens and 7.1 mega pixels. Bought a pink camera case for it at www.cutecamcase.com which has a backup battery slot pouch too, always need one of those.

Since I was too lazy to go out in the rain and get wet, I brought in the big gun for backup: the Canon PowerShot SX200 with a 12x zoom. While the 12.1 mega pixels are great on this camera, it has just enough heft that I can’t carry it in my purse all the time, but I love the long zoom lens.

The better zoom lens shows the difference between a gaggle of robins in a field and getting up beak and personal with the feathered friends. Photography and writers go together; we capture scenes not only in our imagination but in everyday life too and regurgitate those images into writing. Better than eating worms, but the same premise pretty much.

I’ve developed a camera collection by accident since I can’t let go of my 35mms I used on the newspaper. I’m getting ready to make an actual display shelf to show off my camera collection; I still have the 110 camera I carried in my empty ammo pouch during Army basic. Then there is the whole new world of folks taking smart phone pics too, but I find it impossible to give up my wide-angle lenses and zooms – photo details rule!

Have you taken a photo field trip from your porch or front door lately? Give it a try!

How Can We Organize Ourselves And Our Writing For 2013?

January 1, 2013 By Kimberly A. Cook Leave a Comment

by Kimberly A. Cook         (Twitter@ WarriorTales)

Today we say hello to 2013 and start with clean calendars to plan our writing goals. My friend Carol and I say every year,  “This year we’re going to get organized!” We’ve been saying and doing that for more than 25 years and we’re still not done. It’s a process.

Spec Ops Cat does his part to get the office paperwork ready for 2013.
Spec Ops Cat does his part to get the office paperwork ready for 2013.

This past holiday season I took some time to think outside the box and the basket. (See Spec Ops Cat at left) With four manuscripts in various stages from final editing to first draft, I wanted to figure out a way to combine my business needs with my writing time.

It dawned on me I can finish all four manuscripts first and THEN publish them when I choose. Just because I finish a book doesn’t mean I have to rush it out the door to publication. Getting the four books completed first will also help me to budget my finances this year. Duh!

We get so used to striving and straining in a certain direction, we forget to consider if we’re on the right road in the first place; or the correct writing project or the right location. Downtime and thinking time are required parts of being a writer. I’ve set some simple but big goals this year and I’m looking forward to hitting them. It’s also reducing my stress level.

Two of my goals are to spend more time on my photography and having fun. I’ve started having fun by adding this “Authors Are My Rock Stars” calendar to my office. Yeah! http://www.amazon.com/2013-Authors-Rock-Stars-calendar/dp/1402270992/ref=sr_1_1?ie=UTF8&qid=1357006123&sr=8-1&keywords=authors+are+my+rock+stars (And maybe in 2013 I’ll figure out how to shorten and rename these links on WordPress!)

To refill my photography cup, I decided to get a subscription to “Outdoor Photographer” this year. Stumbled upon photographer Ian Plant’s blog and his fabulous top twelve photos of 2012. These are gorgeous. http://www.outdoorphotographer.com/blog/ian-plant/2012/12/twelve-significant-photographs-a-year-2012.html

Make a small change and explore a new area of interest or one you’ve neglected for years. A new calendar or even one magazine can send you off on a new journey in 2013. Maybe being a little more unorganized is what we need to do this year and let our muses wander. Who knows what fun we can have by taking a mosey into the new year instead of trying to speed through life.

Happy New Year everybody! Keep writing!
